Philosophy and Characteristic
Quality does not come without planning and effort.
Our standards are high. That is why our grapes are harvested by hand. After this, a further selection takes place at the “Reception”. With this method, we ensure that only the best grapes are selected for a wine that bears the name, Moyau.
We also limit our production quantity: we have an average yield of 30 hectolitres per hectare. The limitation of the yields leads to a better grape quality and a noticeably stronger fruit concentration of the wines.
With our standards we clearly veer upwards from the requirements of the already strict AOC regulations. Only in this way can we make a guaranteed promise for good taste.
It goes without saying that our wines are classified as AOC Coteaux du Languedoc La Clape.
At Château Moyau we produce

Our white wine La Mer, the rosé wine Le Flamant and the red wine Le Soleil stand for young, fruity wines which are meant to be consumed in the first years after bottling. Our name is based on nature: the view of the sea, the color of the flamingos on the Étang and the sun of the south.
LA FLAMANT
Grapes: Grenache Noir, Cinsault and Syrah
Nose: Aromas of red fruits, strawberry, raspberry, citrus fruits
and grounded rose leaves
Palate: Full-bodied, fresh and fruity
Production: 11,600 bottles
Alcohol: 13.5% vol.
Serving Temperature: 10-12°C
BLANC DE NOIRs
Grapes: Carignan Noirs and Grenache Noirs color with yellow-golden
tones/shades
Nose: Complex aromas of melon, peach, nuts, lime and white flowers
Palate: On the palate, the wine convinces with great body richness.
It is fresh and delicately fruity
Production: 9,200 bottles
Alcohol: 12% vol.

„Terroir AND Character“
Our red wines “Sauvage” and “Terre de Pierres” combine the characteristics of our terroir with the character of the wines themselves. This is how “Un terroir sauvage” describes the Château’s secluded location amid salt lakes, pine forests and the fragrant garrigue with its many wild herbs such as rosemary and thyme. “Terre de Pierres” refers to the coastal mountain range “La Clape” with its rocks and cliffs. And the soil on which the vines grow can really be described as “stony/rocky ground”.
SAUVAGE
Grapes: Carignan, Grenache Noir, Syrah, up to 70 year old grapes
Nose: On the nose cherry, plum, some cinnamon, mocha notes,
leather, thyme
Palate: Full-bodied with fruity, spicy and mineral notes. The wine
reflects our terroirs with the wild natural heather landscape
particularly well

Alcohol: 14.5% vol.

TERRE DE PIERRES
Grapes: Grenache, Syrah, Mourvèdre and Carignan, up to 50 year old grapes
Nose: Bouquet of blackberry, tobacco and chocolate
Palate: An enormous abundance of fruit embedded in velvety tannins.
The wine has aged for approximately two years in new French oak barrels
Production: 11,000 bottles
Alcohol: 14.5% vol.
